Gooey vegan brownies

Now, I'm not vegan, or have any type of dietary restrictions at all, but I do have a few friends that are vegan, so we decided to try our hand at a bit of vegan baking!

Earlier this week I had a friend coming over to watch some films, and we wanted to bake some snacks. Being a complete noob at veganism, I got in contact with the lovely Kayleigh over at Wonderchebs (who if you don't follow, you should), who sent me Bakerbetties Classic Fudge Vegan Brownies recipe. Kayleigh also let me know that 1tsb of flaxseed with 3tsps of water make a brilliant egg replacement- and she was totally right.

So we followed the recipe, but added a wee bit of vanilla extract, and some Oreos (which, are vegan themselves, however they are produced in an environment that also handles milk products, so there is a low risk of cross contamination, so please bare that in mind if you decide to add them as we did). The Oreos added a nice little crunch amongst the chocolatey-gooey goodness.

The recipe calls for 20-25 minutes in the oven, however, when I make them next time, I'll be leaving them in another 5 or so minutes as my bottoms were definitely soggy- Alright for us as we were eating them warm, from a bowl accompanied by vegan ice-cream (which is amazing if you haven't tried it- we got ours from Sainsburys). But if we wanted to eat them as more of a snack and less of a desert, It would have been near impossible. 


Vegan or not, I'd totally recommend this recipe to anyone. My fiancé ate one when he got home from work that night and said they were some of my best brownies yet- and was even more surprised when I told him they were completely vegan! 
Plus me and my friend had a brilliant evening of baking, vegan meatballs, and Lord Of The Rings- Brilliant Friday night I'd say.

  1. I'm vegan and I'm sad to say I've never attempted to bake anything dairy free! I really need to give it a go some time, these look delicious.

    1. My friend hadn't either but seemed to love it, think I'm going to attempt cookies next too!
      I'd miss stuff like this so much if I was vegan, so it's nice to know there's the option for it. If you do, do it, maybe pop a wee bit of baking powder in too so they rise a bit more.

    1. I had to stop myself, not going to lie. I am on a kinda health kick at the moment so that helped (I did try to justify eating more than one with 'but they're vegan!' then remembered how much sugar was in them haha).
